  • Heat 4 gallons of strike water to 168F, begin mash.
  • Depending on mash tun design, mash should settle around 155F.
  • Perform a few decoctions (if desired)
  • Sparge with 165F water
  • Once 6.5 gallons of wort have been collected, add 1/2oz hops.
  • Boil for 90 minutes, adding 1/2 ounce of hops every 30 minutes.
  • Chill wort and pitch yeast
  • For optimum results, ferment for 2 weeks at 48F and condition for 2-6 weeks at 40F. The longer you wait, the better it will taste. Patience is the key!
