Stir-fried Asparagus

Asparagus is one of the best vegetables which has vitamin, protein and minerals. It is basically a root category vegetable. In tamil it is called as "ThanneerVittan Kizhangu". This can be cooked raw or slightly cooked. It is available in two colors white and green. Green color is the most widely used Asparagus. Today we will make stir-fried Asparagus.


Asparagus - 1 bunch
Dry Red chilli - 3
Cumin seeds - 1 tsp
Ginger garlic paste - 1 tsp
Turmeric powder - ¼ tsp
Coriander powder - ½ tsp
White sesame seeds - ½ tsp
Oil for seasonings
Salt as per taste


Wash the Asparagus and take out only the tender part. (Just gently break the asparugus with using your both hand. It will break exactly from where the tender part ends.) Cut this tender parts into thin circles.
Heat a pan and heat 1 tsp of oil. Once oil hot, add cumin seeds and red chilli.
Once Cumin turn the color, add cut asparagus and stir it. Add ginger garlic paste and stir it. Let it cook for a minute.

Now add salt, turmeric powder, coriander powder and stir it. Let it cook for another one minute.

It should not be over cooked, it is always best if we cook only ¾.
Now sprinkle sesame seeds and switch off the flame.

Now healthy Stir fry Asparagus is ready to serve with Chappathi, rice.
