Goat Paya or Mutton Paya

Goat paya or mutton is one of the very famous non-veg recipe in south india. This is best
known street food for the Appam gravy. There is much nutritional values in the goat legs.
People also will make goat leg soup. There is much demand for the paya in south Indian
butcher shops. Usually, people will reserve one day before at butcher shop to get paya. As
goat legs will be smoked and cleaned, the smoky taste will give extra flavor to the recipe.
Let’s make goat paya in our kitchen today.


Ingredients:
Goat paya - 1 kg
Onion -2
Tomato - 2
Bay leaf - 2
Cinnamon stick - 1 inch
Cardamon - 2
Cloves - 3
Black peppercorns - 5 to 6
Ginger garlic paste - 2 tsp
Turmeric powder - ½ tsp
Cumin powder - 1 tsp
Coriander powder - 1 tsp
Red chilli powder - 1-½ tsp
Salt as required
Coriander leaves for garnishing
Oil for seasoning
Steps:
Heat a pressure cooker pan and add 3 to 4 tsp of oil.
Once oil hot, add 2 chopped onion and fry it until onion become wilted.
Then add 2 bay leaf, 1 inch cinnamon stick, 2 cardamon, 3 cloves and 5 to 6 pepper corns
and mix it with onion.
Add 2 tsp ginger garlic paste and stir it. Cook this until raw smell goes out.
Then add 2 chopped tomato, required salt and cook for a minute.
Now add 1 kg goat paya and stir it to mix all together.
Add ½ tsp of turmeric powder and mix it and cook for a minute.
Add a cup of water and cook 5 minutes to bring it to boil state.  We need to always bring the
ingredients to boil before pressure cook in order to get tasty food.
Now cover the cooker with lid and weight and cook upto 8 to 10 whistles.
Switch off the flame, Let the cooker release pressure automatically.
Then, open the lid and switch on the flame and keep it in medium.
Bring to boil, and add 1 tsp cumin powder, 1 tsp coriander powder, 1-½ tsp red chilli powder
and mix it.
Let it cook for 5 minutes until the water reduced bit.
At this stage add required hot water based on your gravy need. Do not add cold water if you
need a tasty paya.
Check the salt now and add accordingly if needed. Bring to boil for another 5 minutes.
Finally Garnish with coriander leaves.
Now tasty, fantastic flavor paya is ready to serve.
